Ingredients

1 cup cornmeal

1 cup plain flour (sifted)

4 tsp baking powder

½ tsp salt

2 Tbsp runny honey

1 egg

1 cup milk

¹/з cup sour cream

¼ cup vegetable oil

Optional:

2 Tbsp chopped Jalapenos

OR 2 x spring onions (chopped finely)

  • If cooking in the offset chamber, the cook time will be around 20 minutes, check frequently to ensure the bottom doesn't burn

  1. Preheat offset smoker, add woodchips for flavour if desired

  2. Put all ingredients together in a large bowl and mix well

  3. Line a roasting dish with baking paper (you can use a skillet or disposable tray for this too)

  4. If cooking cornbread in main chamber, the temperature should be around 250ºF (120ºC), this will take around an hour to cook. If cooking in the offset chamber, the temperature will be a lot hotter, the cook time will be closer to 20 minutes, if the coals are burning hot, you will need to ensure the bottom doesn't burn

  5. The cornbread is done when a toothpick comes out clean, or the bread starts pulling away from the edges of the roasting dish
